Sometime in the 1980s, Pat McClellan, one of the owners of the storied Flora-Bama Lounge and Package, drank a refreshing drink imported from the Caribbean called a “bushwacker” at a bar on Pensacola Beach.

That taste of an “adult milkshake” – it’s definitely for adults only because of its alcohol content – changed the Flora-Bama forever. McClellan added them to the menu at the Flora-Bama, which straddles the Alabama-Florida state line. The bushwacker has since become the signature cocktail at the beachside honkytonk and its across-the-street restaurants, the Flora-Bama Yacht Club and the Flora-Bama Ole River Grill.

“It’s our number-one selling drink,” says Jenifer Parnell, Flora-Bama’s marketing and public relations director. “People just love it.”

She estimates that Flora-Bama properties sell “hundreds of thousands” of bushwackers throughout the year, but especially in the summertime when the frozen concoction is just the thing for chilling on the beach as you listen to live music with the Gulf waves crashing nearby.

The Flora-Bama doesn’t share its recipe (although many versions can be found floating around the Internet). But a basic bushwacker might contain two types of rum (light and dark) and three liqueurs: Kahlua, Amaretto and Crème de Cacao. At the Flora-Bama, these ingredients are combined with milk in frozen drink machines so they’re always ready and always consistent.

Bushwackers can be customized, too, by adding toppers like Skrewball whiskey, which is peanut butter-flavored, or banana rum. Some aficianados like to add a floater of 151-proof rum. Bushwackers are always served with a thick straw and topped with a maraschino cherry.

At the Flora-Bama, a 12-ounce bushwacker in a clear plastic costs $7.75. But this summer, you can get a 16-ounce drink served in a souvenir cup for $12.50. If you bring your cup back for a refill, you’ll save a dollar on the next one.

But be careful. The bushwacker is known to be as dangerous as it is tasty. “It definitely lets you know you’re having a good time,” says Parnell.
