LAPEER, MI — A food truck in Lapeer offers a diverse menu, but it’s best known for its Cuban sandwiches.

Alex Puckett, owner of the Lapeer-based Ya Eat Yet? food trucks, started his business in 2017 after going to school for restaurant and hotel management and gaining experience from working in the restaurant industry in Florida and Mackinac Island.

Puckett currently operates two food trucks that travel across the state to share its offerings of street corn, chicken tacos, BBQ pork tacos, loaded fries, ahi tacos, shrimp po’ boy sandwiches, burritos, Cuban sandwiches and more. Items on the menu range from $4-$12.

“You have to have something different and if you try our food and look at what we have on the menu, there’s so many things on there that are like that’s different,” Puckett said. “You don’t see that everyday.”

The Cuban sandwich is the business’ most popular item statewide and beyond.

Over the last few years, the food truck has been invited to compete at the International Cuban Sandwich Festival at Ybor City in Tampa, Florida. Contenders from South Korea, England, and France have competed in year’s past.

The food truck’s Cuban features a 16-hour slow cooked pork, honey ham, honey Dijon mustard, pickles, Swiss cheese and a dab of mayonnaise between locally baked Cuban bread and hot pressed panini-style.

The food trucks serve at events such as food truck festivals, private events and staple summer events, where two of Puckett’s seven children he shares with his wife Meghan, help operate the business. Meghan does the scheduling for the different events.

“It’s really what drove us through COVID,” Puckett said of the private events.

Before entering the restaurant industry, Puckett served eight years in the U.S. Marine Corps, and often someone in his unit from Alabama would ask, “Y’all eat yet?” in their Southern accent.

The business owner took the question and used it to name his business.

“I was trying to think of a name and I remember that every time we were ready to eat and just thought it would be a good name,” Puckett said.
