Cider can be enjoyed year round, but nothing says autumn like a sip of apple cider in all its glorious forms.

If you appreciate well made cocktails featuring seasonal ingredients, seek out the freshest ciders available—perhaps a locally made craft cider or nonalcoholic apple cider from your nearest orchard—to use in these expert crafted concoctions.

Even if you aren’t a fan of the tart acidity provided by most forms of apple cider, don’t fret; there’s a growing number of cider options, from pear and cranberry to pineapple and beyond, coming to a market near you.

Like most great mixers, ciders provide a pleasant counterpoint to alcohol’s boozy notes, but finding the right flavor combinations is key.

Mansion Global Experience Luxury consulted with mixologists from some of the world’s top bars and cocktail lounges to learn how to make their favorite cider cocktails perfect for autumnal sipping.

The Astor’s Warmer

The St. Regis Aspen Resort delights the stylish crowds attracted to its unrivalled après ski scene. Lead bartender Eric Otero Reyes has garnered raves for the resort’s twist on the classic hot toddy. “Instead of using bourbon, this cocktail features pisco, which brings a vibrant, earthy, and herbal flavor to the mix,” Mr. Otero Reyes says. “Spiced with apple cider and agave nectar, it makes for a light and refreshing drink that still warms the heart and soul during the crisp fall months in Aspen.”

1.5 ounces pisco

0.25 ounce lemon juice

0.75 ounce agave

1 ounce apple cider

5 ounces hot water

1 pod star anise

Combine ingredients into warm cocktail glass. Stir gently. Add star anise for garnish. Makes one serving.

At the speakeasy like Lilly Rose, a subterranean lounge in The Wayfarer, one of downtown Los Angeles’s newest boutique hotels, bar manager Manny Nieves puts his own spin on this classic. “It’s a very old cocktail; typically high proof bourbon, citrus, sweetener, bitters, and ciders,” Mr. Nieves says. “I like to use Wild Turkey

101, lemon, honey, a generous amount of Angostura Bitters, and I like to top it off with Brooks Dry Cider, a hard cider made in Sonoma County.”

1.25 ounces bourbon

0.5 ounce lemon juice

0.5 ounce honey syrup (or honey)

4 ounces dry hard cider

4 dashes Angostura bitters

Combine bourbon, lemon juice, honey, and bitters into a shaker with ice and shake well. Strain over ice into a highball glass. Top with cider. Makes one serving.

The Boom Bap

In Burlington, Vermont, a city that welcomes a stream of foliage seeking visitors every fall, Jeff Bauman, GM of The Great Northern restaurant, delights leaf peepers with this curiously named concoction. “This is the perfect drink for a fall picnic or back yard barbecue,” he says. “I like to use The Breeze, a hard ginger beer from Halyard Brewing Co., for an extra kick and floral note, and Shacksbury Rosé Cider. Both are naturally low in sugar and made in Vermont. The clever host will batch up this unfussy drink for a crowd pleaser, poured over ice per serving. No shaking or garnish needed.”

1.5 ounces reposado tequila

1.5 ounces hard rosé cider

0.75 ounce hard ginger beer

0.5 ounce simple syrup

0.25 ounce lemon juice

0.25 ounce lime juice

Combine all ingredients in a large rocks glass. Fill with ice. Makes one serving.

Spiked Cider

Located between San Diego’s seaside villages of Del Mar and La Jolla, Estancia La Jolla Hotel & Spa’s hacienda style resort offers a relaxing setting for a fall getaway. At the resort’s Mustangs & Burros restaurant, house mixologist Valeria Murrieta was inspired to create the Spiked Cider based on her years of working in the New York food scene.

“This was one of those special cocktails I created during my time there, and when I moved to San Diego, it’s one of the cocktails that stuck with me,” Ms. Murrieta says. “Every time I sip it, I feel like I’m back in Central Park watching the leaves change colors and taking in the new season. Also, the ginger beer really gives it that smooth and crisp taste that you feel when the season changes.”

1.75 ounces bourbon

1 ounce apple cider

0.5 ounce lemon juice

2 dashes Angostura Bitters Ginger beer (as desired)

Combine bourbon, apple cider, and lemon juice into a shaker with ice and shake well. Strain over ice into a highball glass. Add bitters, and top off with ginger beer to taste. Makes one serving.
