Zinnia’s Dinette — Columbia County

Zinnia’s Dinette is a New England fish fry with Hudson Valley flair. They serve baskets of fried clams, scallops, and fresh fish, as well as seasonal veggies and big salads (and some buttermilk fried chicken, if fish isn’t your thing). Located in the former Dutch Treats spot, the diner-style interiors have been revamped to pop with bright primary colors and there’s a big outdoor space. They offer soft serve ice cream and take out. Owner Amy Lawton describes it as “the big hug people have been needing for the last year.” Open Friday to Monday: 11:00 a.m. – 9:00 p.m.

The Hudson House & Distillery — Ulster County

Charles Ferri and partner Paul Seres are putting the finishing touches on a years-long transformation of an old Catholic monastery into Hudson House — a craft distillery, events venue and boutique hotel with restaurant dining and a rooftop bar overlooking the Hudson River in West Park, Ulster County. The distillery and tasting room had its soft opening in August. Hudson House’s Black Creek whiskey, bourbon and rye — which they have been contract distilling and aging — is available to thirsty visitors, along with beer made in collaboration with Mill House Brewing and Hudson House rosé, red and white made with the team at Millbrook Winery. The spirits will eventually be available in stores, but for now, are on-site only.

The River Pavilion at Hutton Brickyards — Ulster County

Located on the banks of the Hudson River at the Hutton Brickyards in Kingston is the open-air River Pavilion, a riverfront restaurant piloted by executive chef Dan Silverman, previously of Balthazar and Minetta Tavern in New York City. The pavilion, open daily, features dishes made using locally sourced ingredients and prepared in wood-fired ovens and grills, like steelhead trout grilled on cedar planks and wood-roasted chicken from Snowdance Farm in Livingston Manor. Open Wednesday - Monday at 5 p.m., with nightly drink specials, including a special daily punch, for happy hour from 5 – 7 p.m. Restaurant service in colder months will eventually move to Cordts Mansion on the 73-acre Hutton Brickyards property.
